– half a ball of mozzarella (125g)

– two handfuls of fresh basil leaves

– 25g Parmesan, grated

– one garlic clove

– 50ml olive oil

– squeeze of lemon juice

To serve:

– a small handful of Brazil nuts, toasted and roughly chopped

Instructions:

For the pesto, blitz all the ingredients together in a food processor until you have a smooth paste, then set aside.

For the gnocchi, Preheat the oven to 200C/400F/Gas mark. Boil the potatoes in their skins for about 15 minutes until cooked through, then drain and leave to cool slightly. Once cooled, peel away the skin and discard.

Mash the potatoes in a large bowl, then add the flour, egg and Parmesan. Season with salt, pepper and a good grating of nutmeg. Mix everything together until you have a smooth dough.

Lightly dust your work surface with flour, then roll out the dough into long sausage shapes about two cm in diameter. Cut into two cm pieces and set aside.

Meanwhile, place the tomatoes on a baking tray, drizzle with olive oil and season with salt and pepper. Roast in the oven for about 20 minutes until beginning to soften.

When the tomatoes are cooked, remove from the oven and allow to cool slightly. Once cooled, place in a food processor and blitz until you have a smooth sauce.

Bring a large pan of water to the boil, then carefully drop in the gnocchi. Cook for two to three minutes or until they float to the surface.

Drain the gnocchi using a slotted spoon and add them to the tomato sauce. Add the mozzarella and stir until everything is combined.

You will need:

– 200g rice noodles

– mango, cut into small cubes

– lychees, fresh or tinned and drained

– red pepper, thinly sliced

– spring onions, thinly sliced on the diagonal

– small bunch of fresh mint, finely chopped

– small bunch of fresh coriander, finely chopped

– juice of ½ lime

– fish sauce

– sugar

– sesame oil

– vegetable oil, for frying

– salt and pepper

To make:

Cook the noodles according to the packet instructions. Drain and refresh under cold water. Mix together the mango, lychees, red pepper, spring onions, beansprouts (if using), mint, coriander and lime juice.

In a separate bowl or jug, mix together the fish sauce, sugar, sesame oil and vegetable oil. Season with salt and pepper.

Heat a wok or large frying-pan over a high heat. Add the noodles and toss in the oil until coated. Fry for a minute or two until crispy.

Add the mango mixture and toss everything together. Cook for a minute or two until everything is heated through. Serve immediately. Enjoy!

Grilled Peach, Arugula and Prosciutto salad

You will need:

– peaches, halved and pitted

– olive oil

– balsamic vinegar

– salt and pepper

– arugula

– thinly sliced prosciutto

To make:
